A selection of three seaweeds (Irish Moss, Wakame and Atlantic Dulse) and a grey sea salt (Sel de Guérande) converge with our cultured butter to create arguably our most intriguing expression.

We have memories of shucking oysters in the rain, waves pounding against the coastline, and an air full of salinity and minerality. This butter was designed to capture that moment, bringing the wilds of an ocean shore to your dining table with each generous spread.

While delicious in of itself, we also enjoy using it in the kitchen for an umami beurre blanc sauce served over white fish.

Madeleine is an Australian producer of cultured butter operating in the Yarra Valley, Victoria. Our work is a labour of love, with every detail carefully considered to meet our exacting high standards.
